Dairy Products From Our Farm
The Bookamer Farm has a variety of milking cows. Our family has loved and learned the many aspects of each type of cow and its benefits to the circle farm. The main benefit is having an animal capable of producing on grass and minimal extras. Thus the term "grass based". The reward is a food that is better for you combined with an animal that works with nature and the land. The land feeds the cow, who in turn feeds back to the land by way of fertilizer and a continual grazing that the land desires. The continual pruning and feeding in a manner controlled by the caretaker keeps all balances in check.
The circle farm then goes full circle, from the animal to the table. We can show you the many uses we have for our milk. Learn not only the best and most efficient way to care for the cow but also what to do with all the milk you will be receiving. We offer classes teaching the making of dairy products from butter to cheese. We also sell supplies for the making of various dairy products. Cheese cultures, rennet and the like are available.

Class #1. "Dairy Day - Making Products from Raw Cream, Skim and Whole Milk"
$25.00 per person
Classes are 2 hrs. with hands-on instruction and demonstration. Participants are given a certificate for 2 gallons of our dairy's raw milk and cultures to recreate some of the dairy projects learned in class.
Topics and demonstrations to be done in class include:
Blender Butter (Buttermilk from making butter)
Cultured Buttermilk
Yogurt
Yogurt Cheese
Whipped Cream
Cream Cheese
Sour Cream
Ricotta
* Many topics to be discussed as to how they "did it in the old days".
Learn how to utilize the advantage of cream separation in raw milk and making food products from cream, skim and whole milk. Modern day dairying meets with the "old ways" in this class as we teach both today's method and the methods of yesteryear so that the student can decide which is to their own benefit

Class #2. "Beginner Mozzarella Cheese Class"
$25.00 per person
Classes are 2 hrs. with hands-on instruction and demonstration. Participants are given a certificate for 2 gallons of our dairy's raw milk and the ingredients to recreate the Mozzarella Cheese at home.
Topics and demonstrations to be done in class include:
The basics of cheese making will be discussed along with the "science" of dairying. The ingredients used in the process are all explained with the "why's" and "how's" of each along with how they were discovered. Learn what uses the by-product of cheese making, whey, has for you. The modern method is taught along with explanations of how they "did it in the old days". Learn what a cheese maker must consider when choosing the milk they use for their cheese. Discussions about the milk, the cow and its nutrition, gestation and what it all means to your cheese. And, of course, learning how to make your own delicious Mozzarella Cheese!
Making your own Mozzarella Cheese is very economical and exceptionally rewarding. For the cost of 2 gallons of milk and a few low cost ingredients you can make up to 4 pounds of cheese. Learn this fun and frugal art today!

Class #3. "Advanced Cheese Class"
$40.00 per person
Classes are 4 hrs. with hands-on instruction and demonstration. Participants are given a certificate for 2 gallons of our dairy's raw milk and the ingredients to duplicate the Cheddar Cheese curds and/or Farmers Cheese at home.
Topics and demonstrations to be done in class include:
The science of cheese making will be approached in a manner that is "common sense" wise understood. Learn about the differences in cheeses along with the ingredients and techniques to make them. The different cultures needed to create cheese and resources on where to purchase them are talked about also. Learn how to "cheddar" and how to make the curds "squeak". Talks about cheese presses, how to use molds and waxing your cheese is also covered. Participation in this advance class will allow you to be able to pick up a cheese manual and know the terms and techniques needed to try any cheese recipe.
Cheese making is both an art and a science. Cheese Artisans take pride in creating a superior cheese with both knowledge and heart. Learn the knowledge that you will need to create a great cheese and all you need to add is the heart.

Class #4. "Making Economical Summertime Treats"
$15.00 per adult. $2.00 per child over 4 years old - Meet & Greet the farm animals.
Class is 1 hour long with hands-on instruction and demonstration. Participants are given a certificate for 1 gallon of our dairy's raw milk and the recipe booklet to make the treats learned in class.
Children ages 4 years and older are invited to attend also (with the class attending adult) to tour the farm and meet and greet our many farm animals while the adult is attending class.
Topics and demonstrations to be done in class include:
Making a variety of summertime treats from ice cream, cream sickles, frozen cream pies ... all with things you already have around the kitchen. Children take a tour of the farm and meet our personable farm critters while the attending adult is taking the class. Both meet back to taste the treats made in class. Learn how to make treats your family will love at a cost that won't break your piggy bank.
